Pheasant Tortilla Soup

Growing up in North Dakota, pheasants are on the dinner table when hunting season begins and depending on your success it hopefully remains on your table for months into the new year.  Our family’s absolute favorite way to prepare pheasant is to make Pheasant Tortilla Soup!  It’s easy and delicious.

Ingredients:

  • ½ cup of diced onion
  • 1 can of diced tomatoes
  • 1 can chicken broth
  • ½ cup of salsa
  • 1 can fiesta nacho cheese soup
  • 1 can cheddar cheese soup
  • 1 ½ tbs taco seasoning
  • ½ lb. Velveeta cheese (I use the spicy/Mexican variety)
  • 1 cup of cooked pheasant (diced/shredded)

Optionally, we’ll add black beans, corn, and possibly a little beer based on what is in the refrigerator. 

Mix all ingredients together in a crock pot (or large kettle) and cook on a low setting until heated thoroughly. 

Enjoy with tortilla chips.
